Meatloaf Pot Roast

What you need:

2 lbs ground beef (or turkey!)
1/2 yellow onion, diced
2 cloves garlic, minced
2 cans whole new potatos
1 bag baby carrots
2 eggs
1 sleeve Ritz Crackers or Saltines, crushed - I prefer Ritz
1 tsp sage
1 cup water
salt and pepper to taste

In a large bowl - or your beautiful Empire Red KitchenAid Mixer - mix together the ground beef, onion, garlic, Ritz, eggs, sage, salt and pepper. If you are doing this in the mixer, make sure you swap out the wire whip for the flat beater. In a large piece of foil, shape the meat mixture like a loaf of bread.

Place the loaf into a large crockpot - arrange carrots and potatoes on the edges of the meat. Sprinkle the veggies with a little salt and pepper. Add one cup water and place on high heat for 2 1/2 hours or medium heat for 4 hours. Low heat if you plan to put this on in the morning and have it ready for dinner.

I just love roasted carrots and potatoes! MMmmm MMmmm
